A Sloppy Sneak

At the last minute yesterday, I decided to make our dinner more festive by making it green. I usually do green food all day on St. Patrick's Day, but for some reason, I wasn't feeling it till dinner.

Homemade Mac 'n' Cheese was on the meal plan, but I used shells in place of macaroni. And instead of adding food coloring, I decided to "sneak in" pureed spinach. You can sneak spinach into anything with a strong flavor or tomato based sauce and it will be virtually undetectd. Chili, spaghetti sauce, lasagna, things like that.

I would NOT recommend sneaking it into Mac & Cheese. Squash was my original pureed veggie of choice and it's mild enough to hide easily. No one noticed and it even helped make the sauce extra creamy.

But Macaroni & Cheese with spinach tastes more like spinach than macaroni or cheese. I choked it down to be a good example, but the reality was: EW. I won't be making that mistake again!

I have to agree that the picture is deceiving, because it actually looks good! Sorry it did not work out. You deserve points for trying though.

It looks really good... but, I'm sure the sneaky aspect didn't work so well.

Have you tried adding white bean puree to mac and cheese? That works pretty well.
