We had tons of leftovers nights last week, so I didn't end up making many of the new items from last week's menu. I did make the Whole Wheat Corn Bread which was delicious! We will definitely make that again. And I ran out of potatoes, so Carne con Papas will have to wait until I get more.
Also, last week I forgot to talk about the Sweet Persimmon and Toasted Walnut Bread. I would not go out and buy persimmon's to make this bread, but if you happen to get them or see them on super sale, it's worth a try. I liked it, but didn't love it. Mike almost the entire loaf and we shared some with friends who loved it, too. It was a very bakery-like crusty bread; crunchy on the outside and soft inside.
Persimmons look like light orange tomatoes, but are a sweeter fruit. I got mine from the co-op, hard as a rock, and found out (online) that they are ripe when they feel like a water balloon. I had to freeze mine (whole), then let them thaw to get them to ripen for me, then I pureed them in the food processor before adding to the bread recipe.

Sunday - Taking Ryan to his first Arizona Cardinals game!!!
