So easy, so good. You can either make your own roasted red bell peppers or buy them in a jar...your choice. Next, I'm going to try adding artichokes instead of bell peppers.

1 (15 1/2-ounce) can chickpeas/garbanzo beans, rinsed and drained
2 cloves garlic, peeled
1 T. lemon juice
1 t. cumin powder
1/2-1 t. salt (to taste)
1/4 cup water
2 T. olive oil*
1 roasted red bell pepper, skin and seeds removed (or one small jar)
Put everything in a food processor or a blender and puree until smooth. Use as a dip or spread on sandwiches or tortilla wraps. Yum. We use it as a dip with carrots, Triscuits, Wheat Thins, pretzel chips, rye crisps from Trader Joe's, Melba Toast...the possibilities are deliciously endless.

I'm currently kicking myself.
I stood in front of the cans of garbanzo beans in the store on Monday for several minutes trying to talk myself into buying some and searching for a new hummus recipe, since the last one I attempted was seriously icky.
I should have bought the beans!
AND, I read these in my google reader, which means I read this one first before the roasted bell peppers post. Which is HI-LAR-IOUS, because my first thought was, guess I'll have to buy a can of roasted peppers too!
Garbanzo beans and fresh bell peppers are now on my shopping list!

I think I will be heading out this weekend to buy a food processor! When we relocated back to Australia a few weeks ago I told my husband that I was thinking about adding one to the list of appliances we need to purchase (I've never actually owned one!). "Making Killer Hummus" is one of my 101 in 1001 and I realize know I really need a food processor in order to do this!
This is also the second time in 2 weeks I've seen something put straight on the gas burner (the other was eggplant) and now I really can't wait until we're back in our house with a gas stove! Thanks for the inspiration, as usual.
