I have so many new recipes that I'd like to try, but don't want to put them all in one week's meal plan, so I decided to post the links here. If you try one, let me know how it turns out!
Carnitas Soft Tacos
Chicken Salad with Poppyseed Dressing
Vegetarian Recipes: (I'm trying to cross off my goal of making meatless meals 3x a week for a month...someday soon...)
Crustless Zucchini Quiche
Crock Pot Minestrone Soup
Couscous-Feta-Chickpea Veggie Delight
Quesadilla Pie

I've made that crescent taco bake twice...the first time was pretty good, but the second time was pretty lousy. I'm not sure what I did differently. But I'll definitely try it again, because I like anything with crescent rolls!
Taco Crescent Bake used to be my "go to" recipe. Love this recipe. I found it in Taste of Home magazine. I don't make it so much anymore with all the chemicals in crescent rolls and chips :( however, it is a nice one pot dish every now and then .
The Black Bean Salad is very similar to one of my all-time favorite recipes. Sadly, I can only make it when the inlaws come to visit because my boys won't touch it!
Slight variations for what I make:
* use fresh mango instead of pineapple
* add avocados
* 'dressing' is lime juice, olive oil, salt, pepper, and red chili flakes
* no jalapeno, green onion, or vinegar
This is totally addictive, and when I get around to writing the post about my favorite recipes (like I've been intending for MONTHS), this salad will definitely be on there.
Enjoy!
Those are some delicious-sounding recipes! The Chicken Salad with Poppyseed Dressing would be right up my alley. I have some zucchini in the freezer, so maybe I should try that quiche!
Just found your blog! Look forward to following it. I have been doing the vegetarian/non-vegeatarian combo meals in our house as well. It saves on the budget, and we really enjoy some of the veggie meals we're trying!
