Kitchen Tip: Make Meatballs in Muffin Tins

I'm not a fan of greasy meatballs, so I tend to bake them in the oven instead of frying them on the stove. I was excited when I saw a great tip on Good Eats about meatballs: form them slightly larger than the size of your mini muffin tins and the grease will drip into the bottom of each tin, making them a little less fatty. Genius!

Except that I don't like my meatballs that big.

So I tried something new this week. I loosely rolled up a piece of foil and put it in the bottom of the mini muffin tin, then placed the meatball on top. It worked really well! Give it a try for healthier, non-greasy meatballs.

I bake my meatballs also, but I put a little piece of bread under each one and it soaks up all the grease.

Surprisingly I've only made meatballs a couple times, but have you ever tried a broiler pan? I use mine a lot if I want excess fat to drain off, and it works quite well. I haven't tried it on meatballs but I think it could save the time of rolling up tin foil.

I use my broiler pan to bake my meatballs. It works great! Much easier than cooking them on the stove!
